Here’s what you need to make the best spelt banana bread: 

  • 2 cups spelt flour (248g) 
  • 1 teaspoon baking soda 
  • Pinch of salt 
  • ½ cup light brown sugar, packed 
  • ½ cup butter, melted 
  • 2 cups mashed overripe bananas (about 5 bananas) 
  • 2 large eggs 
  • 1 teaspoon vanilla extract 
  • 1 cup walnuts or pecans, chopped (optional) 
  • Cooking oil spray

Spelt flour has a mild, nutty sweetness that I prefer over whole wheat. I love baking with it because it’s a wholesome whole grain that simply tastes great. You can substitute spelt flour and whole wheat flour in equal amounts, so they’re interchangeable in most recipes. If your local stores don’t carry it, you can find it on Amazon

For the best banana flavor, use overripe bananas. Their natural sweetness lets you reduce the added sugar, and they blend smoothly into the batter. Fresh ripe bananas work best, as thawed frozen ones can release extra liquid.  

You can also make this recipe into muffins or mini loaves; just shorten the baking time since smaller portions cook faster. 

To make spelt banana bread with no sugar added, replace the brown sugar with a no-calorie alternative like Swerve brown. The ripe bananas already add plenty of natural sweetness, so we don’t need much added sweetener in this recipe. 

I experimented with browning the butter before adding it to the batter, but I didn’t think it was worth the extra work. 

Spelt Banana Bread Recipe Mix Ins

I recommend adding walnuts or pecans to this healthy banana bread, but you can easily switch things up with other mix-ins. Feel free to get creative and make this spelt banana bread your own with these ideas: 

  • Chocolate Chips 
  • Almonds (or other nuts) 
  • Shredded coconut 
  • Pumpkin seeds 
  • Dried cherries 
  • Dried blueberries 
  • Chopped dried apricots 

You could also add almond extract to the batter if you like that flavor. 

🍞 How to Make Spelt Flour Banana Bread 

Preheat the oven to 350F (177C). Lightly coat a 9×5-inch (22.9×12.7 cm) loaf pan with cooking spray. 

Weigh the flour, then combine it with the baking soda and salt in a medium bowl. Measuring by weight gives more consistent results, as using cups can make the bread too wet or too dry.

In a large bowl, whisk together the brown sugar, melted butter, mashed bananas, eggs, and vanilla until well combined. 

Add the dry ingredients to the wet mixture and stir gently until all the flour is moistened. Avoid overmixing, which can make the bread dense and limit rising. Gently fold in the nuts, if using. 

Pour the batter into the prepared loaf pan and spread it evenly with the back of a spoon. 

Place the pan on an oven rack about one-third down from the top. Bake for 55–60 minutes, or until golden brown. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to finish cooling before slicing. 

How do you know when banana bread is done?

Fully baked banana bread is golden brown with a cracked top. It should pass the toothpick test, meaning a toothpick inserted in the center comes out clean or with a few crumbs attached.

How do you fix undercooked banana bread?

If the bread is undercooked, return it to a 350F (177C) oven and bake for another 5–10 minutes, checking frequently. Cover the top with foil if it’s browning too much.

Why does my spelt bread not rise?

Spelt bread may fail to rise if the batter was overmixed, the baking soda is expired, or the mixture is too wet. Use fresh ripe bananas instead of thawed frozen ones, which can add extra moisture.

Does spelt flour need more water?

No. Spelt flour often requires slightly less liquid than whole wheat flour. If your batter seems too wet, reduce the liquid by about 25%.

Storing Leftovers

Wrap cooled spelt banana bread in plastic wrap and refrigerate for up to 3–4 days. For longer storage, place wrapped slices or the whole loaf in a freezer bag and freeze. Avoid leaving it at room temperature for more than 1–2 hours.
