Low-Carb Healthy Fox Nut Delight

For me, the festival of Navratri is more like a personal reset button to recharge myself. During these 9 days, my kitchen functions at a slow pace with simpler ingredients to make every meal more intentional. With my Keto Lifestyle, Navratri fasting is about looking for innovative ways to prepare meals that are low-carb while honoring the traditional ingredients. Keeping that in mind, I recently prepared a healthy Navratri smoothie recipe using fox nuts to keep me fuller and energized all day long. Plus, it gives me both health benefits and delicious flavor.

The combination of fox nut (makhana) and other nuts delivers continuous energy for the body. What’s best is that this smoothie meets all my dietary requirements, as it contains no carbohydrates, no gluten, and no refined sugar. So, it provides continuous energy without any sugar spikes that I experience with other beverages.

Moreover, this smoothie has a perfect creamy texture of coconut milk that has its natural sweetness and also contains sufficient essential nutrients. This makes it a perfect beverage to maintain energy during your Navratri rituals without experiencing any heavy sensations.

Ingredients:

  • 5g dry roasted makhana
  • 10g roasted peanuts
  • 3 crushed almonds
  • 150ml coconut milk
  • 50g banana
  • 50g apple
  • 1 small date
  • 2 tsp soaked chia seeds (optional)
  • A pinch of cardamom

Instructions:

  1. Dry-roast the makhana until they crisp up and let them cool. This gives it a nice nutty taste, while making blending the ingredients easy.
  2. In a high-speed blender, add the roasted makhana, peanuts, and crush the almonds together using ‘pulse’ once so they are chopped coarsely. Next, add the banana, apple, coconut milk, and date to sweeten naturally. Meanwhile, this maintains a creamy texture.
  3. Blend to a smooth consistency. If you prefer a thicker texture, keep it dense; otherwise, add some water or more coconut milk to create a thinner consistency. Finally, stir in the soaked chia seeds and a pinch of cardamom at the very end of blending to have that subtle festive aroma.
  4. Serve in your favorite glass and enjoy the freshly made, filling smoothie that’s perfect for any fasting day.
