Bread on a Keto diet? Sounds too good to be true to you, right? But it’s possible! However, don’t think it’s another one of those almond flour-loaded, egg-heavy recipes. It’s a gluten-free, high-fibre, low-carb Keto Ragi Bread recipe. Made from finger millet flour (Ragi) and psyllium husk, this bread is a perfect blend of Keto-friendly ingredients and Indian supergrains. It is soft and slightly nutty, making it a wonderful treat for those craving a read bread without consuming carbs unnecessarily.
I personally love the earthy flavor of ragi – a staple in many Indian homes for centuries. Ragi is rich in iron, calcium, and complex carbs. This makes it a healthier alternative to wheat flour. But the real twist in the recipe comes with psyllium husk that’s gut-friendly and aids in weight management.

Ingredients:
- 1 cup lukewarm water
- 2 tbsp psyllium husk
- 1 cup ragi (finger millet flour)
- 1 tsp dry yeast
- 1 tsp stevia (or the keto-friendly sweetener of your choice)
- 1 tbsp oil (olive or coconut)
- ½ tsp salt
- 1 tsp apple cider vinegar
- Milk for brushing (use almond milk for dairy-free)
- Sesame or other seeds for topping (sunflower, flax, or chia also work great!)
Instructions:
- Take a large bowl to mix lukewarm water, dry yeast, and stevia. Let this mixture sit for 15 minutes until yeast activates.
- Next, add oil, salt, psyllium husk, vinegar, and ragi flour to the mixture.
- Keep stirring all the ingredients to form a dough.
- Let it sit for 1 hour by covering the bowl – until the dough doubles in size.
- Apply some oil to your palms and start forming small buns out of the dough.
- Keep the buns on a baking tray and brush their tops gently with milk while sprinkling sesame seeds or your favorite seeds.
- Cover and let it rise again for another 30 to 40 minutes.
- Preheat your oven to 180°C (350°F), place baking tray into it.
- Bake for 30-35 minutes or until the bun tops turn lightly brown.
- Take out the buns and let them cool down before serving.
