During Navratri, homes are not only filled with prayers, colors, and positive vibes, but also the tempting aroma of festive food. However, for those who are fasting while adhering to their Keto diet, like me, mealtime can feel a little tricky. But don’t worry, to solve your fasting meal woes, I have come up with more healthy and interesting Navratri special recipes this year. Today, I’m sharing my Keto-Friendly High-Protein Vegetable Soup Recipe. This warm bowl of soup is zesty yet filling enough to keep you energized through all Navratri rituals.
What makes this soup extra special is that it’s nourishing, comforting, and protein-packed. Plus, it wouldn’t weigh you down or break my fast. The wholesome ingredients, like Fresh bottle gourd and coriander stems, add natural freshness and nutrients to the soup. On the other hand, paneer adds the much-needed protein punch. With a hint of green chili and lemon juice, you get a kick, making each spoonful a flavor-packed, guilt-free delight.

Ingredients:
For vegetable broth:
- Some bottle guard peels
- Fresh coriander stems
- A few slices of tomatoes
For Soup:
- 1 tbsp ghee
- 1 tbsp chopped ginger
- 1 tbsp chopped green chili
- 2 tbsp finely chopped fresh coriander
- 1 cup chopped bottle guard
- ½ cup chopped carrots
- Salt to taste
- Pepper to taste
- 1 tbsp sabudana (Sago / Tapioca pearls)
- 100g chopped paneer
- Freshly squeezed lemon juice
Instructions:
For Broth:
- Take properly washed fresh coriander stems, bottle guard peel, and some tomato slices.
- Take a pot with some water and let it boil.
- Now add the washed ingredients (from step 1) into the boiled water.
- Let it boil for 5-10 minutes till it changes its color.
For Soup:
- Take a cooking pot and add 1 tbsp ghee, chopped ginger and chopped green chilli it. Sauté it for a while.
- Now add fresh, finely chopped coriander stems and sauté well.
- Add chopped bottle guard and carrots to it and sauté on a high flame. Also, add some salt and pepper to it while sautéing.
- Next, add vegetable broth along with some water into the mixture.
- Also, add 1 tbsp sabudana (Sago / Tapioca pearls) in it to thicken the soup a bit.
- Once vegetables and sabudana are cooked, add 100 g chopped paneer along with fresh lemon juice and chopped fresh coriander leaves.
- Remove from heat and enjoy your protein-rich vegetable soup.
