Store leftover Kodiak cornbread in the refrigerator for up to 3-4 days. Wrapping individual mini loaves in plastic wrap helps keep them fresh.
You can also freeze the cornbread. Wrap each loaf individually, place them in a freezer bag with the air pressed out, and thaw overnight in the refrigerator before reheating. To reheat Kodiak Cakes cornbread, microwave unwrapped loaves on high for 30-60 seconds.
