Keto Tofu Bowls
Divide the spinach, slaw, tofu, cucumber, and peppers among three bowls. In a small bowl, whisk together the mayo, ginger, lime juice, lime zest, and garlic (plus a splash of optional almond milk, if needed) to make a ginger-lime aioli dressing. Drizzle over the bowls, garnish with scallions, and serve.
