Kodiak Cakes is a whole grain pancake mix with added protein. I tend to stick with the classic buttermilk flavor since it works well across a wide range of recipes.
For this recipe, you’ll also need a large cast iron griddle or skillet, a spatula for flipping the pancakes, and a small food-safe baggie. For the most consistent results, it helps to weigh the Kodiak mix with a food scale instead of measuring by volume.
🥞 How to Make Kodiak Cakes Cinnamon Roll Pancakes
In a medium bowl, whisk together the Kodiak Cakes mix and water.
Scoop ¼ cup of the batter into a separate small bowl, then stir in the brown sugar, cinnamon, and flour. Transfer the cinnamon mixture to a small baggie and snip off one corner.
Lightly mist a stovetop griddle with cooking spray and heat it between medium-low and medium. Once hot, pour about ¼ cup of batter onto the surface and pipe a cinnamon swirl on top. Work on one pancake at a time so the batter doesn’t set before you add the swirl.
Cook the pancakes until bubbles form (this won’t take very long), then carefully flip with a spatula and continue cooking until golden brown.
While the pancakes cook, whisk together the powdered sugar, milk, melted butter, and vanilla until smooth and creamy. Use the icing right away, as it hardens quickly. If needed, thin it with a little extra milk.
Drizzle the icing on the cinnamon roll pancakes when they are finished cooking. This recipe makes four pancakes, the perfect amount for sharing.
Cinnamon Roll Pancake Tips
Short on time? Skip the icing and serve with maple syrup instead. Pancakes can take a little practice, so don’t worry if your first batch isn’t picture perfect.
How to Store Cinnamon Roll Pancakes
These pancakes are best enjoyed fresh. Store leftovers without icing in a covered container in the refrigerator for up to 1-2 days and reheat in the microwave.
