Protein biscuits are a popular snack among fitness enthusiasts and those looking for a healthier alternative to traditional biscuits. These biscuits are typically made with protein powder, flour, and other ingredients that are high protein and lower in carbohydrates. Here, I’m making biscuits with Kodiak pancake mix for a protein boost.
🛒 Kodiak Biscuits Ingredients
Here’s what you need to make this easy protein biscuit recipe:
- 1 cup Kodiak Cake mix (126g of the buttermilk pancake and waffle mix, plus extra as needed)
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 3 tablespoons cold butter (I use salted butter)
- ⅓ cup buttermilk (plus an additional 1 tablespoon to brush on top if desired)

I use the Kodiak buttermilk pancake mix in this protein biscuits recipe because it is relatively low in added sugar. This mix has only 3 grams of added sugar per 63 grams of mix (half cup). If you use a different Kodiak pancake mix, your biscuits may taste too sweet.
You may be able to make gluten free protein biscuits with the gluten free Kodiak Cakes mix. It seems like a worthy experiment if you need a GF biscuit.
You’ll also need a whisk, rolling pin, biscuit cutter, cookie sheet, and parchment paper to make protein biscuits. A food scale is necessary to weigh the Kodiak Cake mix for the best results. Volume measuring large amounts of dry ingredients can lead to failed baking recipes, so I don’t recommend it.

Here are the step-by-step instructions to make this Kodiak Cakes biscuit recipe (yields 5-6 biscuits):
Preheat the oven to 425 degrees Fahrenheit (218C). Weigh the Kodiak mix using a food scale. Whisk the Kodiak mix, baking powder, and salt together.
Cut the butter into the dry ingredients until the mixture turns into uniform small crumbs. (A food processor makes quick work of this.)
Stir in the buttermilk. Gently knead the mixture into a soft dough. Don’t overwork the dough.
Roll the dough into a rectangle between two pieces of parchment paper. Sprinkle some additional Kodiak mix on the parchment before rolling if the dough is a little sticky. Fold the right and left edges over on the dough, then roll it out into a rectangle again.
Repeat this rolling and folding process a total of five times. This will help you get those deliciously flaky biscuit layers.
Roll the dough into a ½-inch thick (1.27 cm) rectangle on the parchment paper. Cut the dough into 2.5-inch diameter (5 cm) biscuits using a biscuit cutter or floured glass. Don’t twist the cutter as you cut the dough, this will make it easier for the biscuits to rise.
Note: if you make the biscuits a different thickness or diameter, it may change the baking time.
Space the biscuits out on a baking sheet (I used a cast iron pizza pan). Brush the tops of the biscuits with buttermilk if desired. Bake the biscuits for 12-14 minutes on an oven rack ⅓ down from the top of the preheated oven. Enjoy!
For an added touch of deliciousness, brush the tops of the biscuits with melted butter and drizzle with honey after baking.
Note on Kodiak Cake Biscuits
These have a crisp outside and tender inside, what I called a biscuit growing up (not a pillowy dinner roll). These may not be your Southern grandmother’s cherished biscuit recipe, but they’re about as flaky as you’ll get for a whole grain biscuit, particularly one with added protein.
Freezing and Reheating Leftover Biscuits
Leftover protein biscuits can be kept in an airtight container in the fridge for up to 3-4 days. Reheat protein biscuits in a 350F (177C) oven for 5-7 minutes.
These protein biscuits also freeze well. Wrap them individually in plastic wrap, and store in the freezer in a freezer bag with the air pressed out. Thaw in the refrigerator for 24 hours before reheating.
