When you choose a Ketogenic diet, you pick foods that balance blood sugar levels, fuel mental clarity, and still feel indulgent. Yet dips are one of the first food items that people stop consuming when they begin their healthy diet. It is because traditional dips are typically loaded with hidden sugars and unnecessary carbohydrates. That’s why I’ve come up with my Keto-friendly Roasted Bell Pepper Dip to add a healthy alternative to enhance my meals.
Bell peppers may not be an obvious choice when looking for things to eat on the ketogenic diet. But when used properly, they can be included in the low-carb lifestyle. When you roast bell peppers, their natural sweetness increases, while keep carbohydrates in check, especially when blended with healthy fats, like extra virgin olive oil or tahini. As a result, you get a delicious dip that doesn’t knock you off your healthy Keto diet.
This is the perfect recipe for anyone looking for something that tastes bold but clean. The best thing is that you can prepare it with minimal effort, without compromising food quality and flavor.

Ingredients:
* 3 Bell Peppers (1 Yellow, 1 Red, 1 Green)
* 3 Garlic Cloves
* 2 tbsp Tahini
* 1 tbsp Parsley
* 4 Olives
* 1 tbsp Extra Virgin Olive Oil
* Salt to Taste
* Paprika
* Chilly Flakes
Instructions:
1. Slice the bell peppers in half and take out all the seeds.
2. Place them on a baking tray and place the tray into a hot oven for thirty minutes at 220ºC or until the bell peppers become soft and the skin on the outside of the bell peppers is charred.
3. Wrap the roasted bell peppers with aluminum foil or put a lid on the baking tray, then wait for the bell peppers to cool down slightly.
4. Once cooled, carefully take off the charred skin from the outside of the bell peppers to reveal the soft inside of the peppers.
5. Put the roasted bell peppers into a blender along with the tahini, garlic, parsley, olives, paprika, and chili flakes. Add salt based on your preference.
6. Blend all ingredients until the mixture is smooth and creamy.
7. Garnish it with peanuts, parsley, or seasoning of your choice before serving.

This scrumptious roasted bell pepper dip pairs well with grilled meats and veggies. You can also enjoy it with Keto crackers, celery sticks, cucumber slices, grilled chicken, roasted paneer, or keto-friendly flatbread. Or simply use it as a wrap spread or serve alongside Mediterranean-inspired meals.
