Most dishes I create come from inspiration, but today’s recipe – “Keto Puri with Cauliflower Curry?” It’s fueled by pure defiance! It came from a quite dramatic staredown with a plate for hot, crispy puris at my friend’s Navratri Ashtami celebration – when everyone was lining up their plates full of fluffy puris, cauliflower curry, kala chana, and halwa. While everyone was dunking their hot puris in curry/halwa/chana and enjoying their best carb-loaded life, I was sitting on the couch silently having salad and calculating macros in my head.
That moment I realized that Ketogenic Lifestyle is not just about skipping those delicious moments. It just means to outsmart carbs more healthily. That night, once I was back home, I did some online research—determined to find a way to make a keto-friendly puri that’s as soft and tasty as its traditional wheat version.
And, guess what? I found the perfect ingredients! I just replaced wheat flour with coconut flour and almond flour to fry the similar fluffy puris to enjoy with a delicious curry – without the need for a cheat day. It is full of flavor and also satisfies every Indian food lover’s craving for traditional “Puri with Curry” while keeping up with Ketosis.

Ingredients:
- 1⁄4 cup Coconut Flour
- 1⁄4 cup Almond Flour
- 1/2 tsp Xanthan Gum
- 1⁄4 tsp Salt
- 1 tsp Avocado Oil (or any other healthy oil of your choice)
- 1⁄4 cup Hot water
Instructions:
- Take a large bowl and mix almond flour, coconut flour, salt, xanthan gum, and 1/2 tsp of avocado oil.
- Add hot water in portions to knead a fine dough with your hands.
- If the dough feels dry and stiff, add a little more oil and knead again.
- Once the dough is ready, divide it into 8 portions.
- Roll out the dough or use a tortilla press while applying oil to keep the dough soft.
- Take a large pan and heat oil on medium to high flame.
- When oil is hot enough for drying, add rolled-out dough.
- Gently press down the puri with a spatula to puff it up.
- Cook on both sides until puri is golden brown. Repeat the same with the remaining dough.
