Brownies have always been one of my favorite desserts. And, why not? It’s fudgy, rich, and irresistibly chocolatey — so yum! But embracing the Keto Lifestyle comes with a few sacrifices that include giving up on delicious brownies. Little did I know in the beginning that some creativity (that comes with a lot of trial and error) can help me whip up Keto-friendly eggless brownies that are as indulgent as conventional ones.

Throughout my Keto journey, I have been experimenting with different recipes. I try pushing boundaries to create something wholesome with low-carb ingredients. After countless batches and some tweaks, I have come up with my eggless and flourless brownie recipe. It is loaded with cocoa, seeds, and natural sweetness to align with my Keto diet. Even my kids enjoy this guilt-free dessert with me whenever we want something indulgent with our coffee.

Ingredients:

 

  • 1/2 cup pumpkin seeds
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 cup sunflower seeds
  • 1/2 tsp baking soda
  • 1/4 cup sweetener of your choice
  • 1 tsp baking powder
  • 3/4 cup almond milk
  • Toppings: walnuts and sugar-free chocolate chips

 

Instructions:

 

  1. Preheat your oven to 180°C and take a small baking pan lined with parchment paper.
  2. Begin with grinding pumpkin seeds and sunflower seeds in a blender or food processor. It doesn’t have to be very fine. Some texture is good for a rustic feel.
  3. Take a bowl to mix ground seeds, baking soda, cocoa powder, and baking powder. Whisk everything well to make the mixture lump-free.
  4. Add almond milk and sweetener to the dried mixture. Keep stirring until you get a thick, luscious batter that looks dense.
  5. Now, transfer the brownie batter into your baking pan while smoothening the top. Sprinkle chopped walnuts and chocolate chips over the surface.
  6. Put the pan into your preheated oven and bake it for 30 minutes or until your inserted toothpick comes out clean.
  7. Cool down brownies and slice them into small squares.
  8. Serve with coffee or enjoy as it is .
