Chinese potstickers, wontons, and Japanese gyoza are all popular Asian dumplings, and the names are often used interchangeably in the U.S. For example, Trader Joe’s sells “pork gyoza potstickers.”

• Potstickers are Chinese dumplings traditionally pan fried until crisp on the bottom.  
• Wontons usually have thinner wrappers, less filling, and are often served in soup.  
• Gyoza are Japanese dumplings inspired by Chinese dumplings (jiaozi), typically with thinner wrappers and finely chopped fillings.
