🍪 How to Make Kodiak Peanut Butter Cookies
Here are the step-by-step instructions for how to make cookies with pancake mix:
Weigh the Kodiak Cakes mix and the sugars with a food scale. Set them aside for now.
Combine peanut butter, butter, sugars, egg white, and vanilla together in a large mixing bowl using the medium speed on a hand mixer. Add in the Kodiak pancake mix at low speed until it is just blended.
Gather the dough into a ball and chill for one hour. At the end of the chilling time, preheat the oven to 350F (177C).
Use a cookie scoop to make rounded tablespoon-size balls of cookie dough. Place the cookie dough balls 2 inches apart (5cm) on a dark parchment-lined baking sheet. Partially flatten each cookie twice with a fork, making a crisscross pattern.
Bake the cookies for 11-12 minutes on a rack 1/3 down from the top of the oven. When done, the outsides of the cookies should be set and the bottoms should just be beginning to brown. (Note: they look undercooked coming out of the oven. This is the secret to soft peanut butter cookies!)
Let the Kodiak Cakes peanut butter cookies cool for 5 minutes on the baking sheet before transferring them to a wire cooling rack to finishing cooling.
These cookies are best at room temperature or chilled. They will last up to 3-4 days in the refrigerator if you wrap them individually in plastic wrap or keep them in an airtight container.
Leftover cookies also freeze well. Stack them in a freezer-safe container with parchment or freezer paper between the cookies to prevent sticking. Put them back in the fridge for 24 hours to thaw.

💭 Expert Tips from Dietitian Summer Yule
This is a level 3 recipe (weight maintenance and active lifestyles). Are Kodiak peanut butter cookies healthy? Using Kodiak Cakes mix instead of traditional flour does add a bit more protein and fiber compared to classic cookies.
That said, these easy peanut butter cookies still contain plenty of sugar and butter, so they fall more into the treat category than an everyday snack. Since it is easy to enjoy more than one, they are not especially low in calories. If weight loss is a goal, they may not be the most supportive choice, but they can still be enjoyed occasionally as part of a balanced approach.
Overall, swapping Kodiak Cakes mix for white flour does not make a major nutritional difference per cookie in this recipe. Kodiak Cakes does offer more protein than many other baking mixes, such as Bisquick, which can be a nice bonus. Those differences tend to matter more if you typically eat larger portions rather than just a single cookie.
