Keto Friendly Aloo Halwa Recipe with Cauliflower

To be honest – if you have been following Ketogenic Lifestyle for some time, you must be skipping on some of your most loved comfort foods. Isn’t it? I know this struggle – as I also had to give up on my favorite Aloo ka Halwa – a soft rich, buttery Indian dessert that’s perfect for festive or other special occasions. Potatoes had been off the chart for me since they’re too high in starch and carb content. But over time, I found an interesting alternative for my Keto-friendly Aloo Halwa Recipe.

 

You’ve probably guessed it from the title—”cauliflower” is my go-to potato substitute. After boiling and blending in a mixer, cauliflower mimics the consistency and softness of mashed potatoes. This makes it an ideal low-carb base for my keto-friendly halwa.

 

Trust me, it’s shockingly very close in texture and taste to the classic Aloo Halwa recipe. When cooked right, cauliflower becomes a perfect low-carb veggie to blend effortlessly into Indian desserts. So, you can indulge in your favorite halwa – minus the guilt. Plus, cardamom and saffron add a classic halwa flavor to the recipe.  Even my non-keto family members can’t resist getting second helpings.

Ingredients:

 

  • Cauliflower florets 250g
  • Ghee/Clarified butter 1/4 cup
  • Stevia sweetener 1/2cup
  • Saffron strings 5-6
  • Cardamom powder 1/2 tsp
  • Almond Slivers 10g

 

Instructions:

 

  1. Add chopped cauliflower florets to a saucepan with water.
  2. Leave it on medium flame to boil for 5-10 minutes so that the florets become tender.
  3. Once boiled, take it off the heat and let it cool.
  4. Now, take another pan and put 1/4 cup ghee/clarified butter in it over medium flame.
  5. Let ghee heat for a while and then add the pureed cauliflower in it.
  6. Keep stirring it consistently until it cooks properly and the ghee starts seeping out.
  7. As the keto also is cooking, take some lukewarm water with saffron strings.  This will add flavor and color to this halwa.
  8. Next, add stevia as a sweetener while adding color to the halwa. Keep sauteing and let the ghee seep out.
  9. After that add almond sliver to the halwa and stir for another 2-3 minutes.
  10. Add cardamom powder to the halwa and stir properly.
  11. Put power saffron water if required.
  12. Your tasty Keto halwa is now ready to be served.
