Baking is somehow deeply comforting, especially when preparing a loaf that’s not just to fill the stomach but also to add nutrition to the body. My Healthy Oat Flake Seed Bread is for those who prefer a light morning meal. Besides begin light, it’s also wholesome, filling, and delicious. If you have been following my Keto journey, you already know I like preparing recipes that make Keto meals joyful, not restrictive.
This bread loaf reminds you that eating healthy doesn’t mean to consume something bland. It’s soft, aromatic, highly nutritious, and honestly feels like a small self-care morning treat. Every ingredient in this particular recipe has a purpose. Oats add fiber and cleanse the intestines while providing long-lasting energy. Flaxseeds give a boost of omega-3 to the loaf for supporting your digestion and heart. On the other hand, pumpkin seeds are to add crunch along with its immunity boosting power.
You can pair its bread slices with my refreshing yogurt-herb walnut sauce (mentioned below). This sauce is creamy, zest, and loaded with vitamin C to add a tasty lift to every bite.

Ingredients:
Bread:
1.5 (170 g) cups oats
1 tsp baking powder
1/3 cup (60g) flaxseeds
1/2 tsp salt
1 tsp pumpkin seeds & a handful for toppings
2 eggs
1 cup Greek yogurt
2 tbsp olive oil
1 lemon, soaked in 1 tsp apple cider vinegar
Bread Sauce:
2 tbsp quark
3 tbsp Greek yogurt
Green veggies (dill and parsley)
Walnuts (several halves)
1-piece fresh cucumber (juice extracted)
1 garlic clove
Juice of half a lemon
Instructions:
Baking the Bread:
1. Take a blender and grind the oats into flour.
2. Add the ground oat flour in a bowl and add baking powder, flaxseeds, salt, and 1 tsp of pumpkin seeds into the flour.
3. In another bowl, whisk two eggs with olive oil, and Greek yogurt.
4. Now, combine all dry and wet ingredients and mix well. Make a fine dough and keep it aside for 10 minutes until it rises.
5. Grease a tin with olive oil, and add dough side it evenly and smoothen the top.
6. Sprinkle a handful of pumpkin seeds on top of the dough.
7. Bake it in a preheated oven at 180 °C (350 °F) for around 45–50 minutes until it turns golden brown.
8. Let the bread cool down completely before slicing.
For Sauce:
- Mix all the mentioned ingredients well until it’s smooth. That’s all, your healthy sauce is ready to pair with the bread.
