A 1½-tablespoon cookie scoop and a metal spatula make shaping and flipping these patties easier. If you’re baking them in the oven, have parchment paper and a cookie sheet ready. For pan frying, a cast iron skillet works best for a crispy, golden finish.
🍚 Mashed Potato and Rice Recipe
In a mixing bowl, combine the mashed potatoes, rice, flour, egg, and seasonings, stirring until the mixture is uniform.
Oven Directions: Preheat the oven to 425F (218C) and line a baking sheet with parchment paper. Scoop eight 1½-tablespoon portions onto the sheet, spray with cooking spray, and bake for 20 minutes, flipping and flattening the patties halfway through baking time. Spray again after flipping.
Stovetop Directions: Melt oil and butter in a cast iron skillet over medium heat. Scoop eight patties into the skillet and cook for 7 minutes, then flip, flatten, and cook for another 5–7 minutes until golden.
These patties are tasty on their own or with sour cream. Store leftovers in a covered container in the fridge for up to 3–4 days.
